I used to hate sunny side up eggs where the yolk would burst, I thought it was so gross. Somewhere along the way it became one of my favorite things (if you are reading this Christina, just stop before you vomit you non-egg lover!) ... Eggs benedict, sunny side up, egg sandwich, I love it!!
There was a section in my Martha Stewart Everyday Food magazine that explained how to make poached eggs and although I wish I would have gone the extra mile to do some eggs benedict (or florentine), I didnt due to the fact that I was starving!
So the steps to a poached egg is pretty simple, mine cooked just a little too much, but it still had the right touch of runniness (dont know another word for a perfectly yolky egg). I toasted some bread, spread some cream cheese on that mug, a slice or two of tomato, the egg and some fresh cracked pepper ... SO GOOD!

So I recently went on a trip to Ireland and overall it was pretty awesome. Tiring, but awesome. I totally thought I was going to be stuffing my face with potatoes and beer, well I did do the beer, but not so much potatoes. I didn't know what exactly traditional Irish food was, so my dumbass automatically assumed potatoes, only because thats what many of the poor Irish families ate during the famine (I only know this because I read Angela's Ashes :-) ...
Anyways, although I didn't stuff my face with taters, I did enjoy many other cuisines ... From Indian to Italian ... Here are a few pics of the delicious encounters I had ...
Chicken and Champ (mashed taters) @ the Mermaid Cafe in Dublin
Spinach, Arugula, Roasted Peppers with Creamy Goat Cheese in Phyllo Dough (Sooo Good!)
Al Dente Ravioli stuffed with Ricotta and Spinach, topped with Pesto and Pine Nuts
Japanese food! Pretty damn good!

I'd go back to Ireland just for these fresh and hearty blueberry muffins!
